Since the first batch went off so well, it’s time to try to get the mix right…

The saltiness was a little bit much, so cut the salt content of the curing mix and to get rid of the caffeine tang, another flavour (as well as the molasses) will be added.

Luckily, a friend has requested a load for a camping holiday over the bank holiday and he suggested that he’d want to try the Marmite flavour, so poll aside, Marmite flavoured caffeinated bacon it is!

Recipe this time:

  • Loin of pork
  • 900ml of cold water
  • 90g of cooking salt
  • 2 heaped teaspoonfuls of molasses
  • 3 heaped tablespoons caffeine powder (about 60ml of caffeine)
  • 50g Marmite

The whole kitchen smells marmitey.
